The Beauty of Nature Around Home!

The beginning of spring has brought out so much beauty around the house. We ooooo and ahhhhh when we see something that appeals to our senses - particularly our sight. Too often time has lapsed by when we wished we had a camera at our disposal to capture the beauty of the moment. We keep our camera on the dining room table just in case an opportunity should arise that we might want to capture and share!

Mmmmm - good! Strawberry Angel Food Delight

Mom has had a recipe we have made for years - Angel Food Delight! While browsing on line at some of the recipe sites I frequently scan, I found a recipe similar to Mom's. It is so easy to make and sooooo good! Thought I would share it with all who read this blog. Since we have so many who need to watch their sugar intake - I used a sugar-free Angel Food Cake ( purchased st Foodfair); fresh strawberries slightly sweetened with Splenda; sugar free strawberry Jello; and sugar-free Cool Whip!!!

Strawberry Angel Food Delight

1 large Angel food cake
2 small packages frozen strawberries
6 oz sugar-free strawberry Jello
2 1/2 c of boiling water
1 pt Cool Whip
1 pt Cool Whip (for topping if desired)


Break cake into pieces into a 9 x 13 inch pan. Set aside. Dissolve Jello in water. Add the frozen berries to Jello (it will become syrupy almost immediately upon separating the berries). Fold in Cool Whip. Pour over cake, cutting throughout to equally distribute over cake. Refrigerate to set. Top with Cool Whip, if desired when served.

I topped the dessert with Cool whip and sliced strawberries!!! When using the fresh strawberries, I sliced them and covered with Slpenda. I let it set until it made its own sweetened juice!!! I sliced and used about three cups of the fresh strawberries!

Mom always used no sugar added fruit cocktail instead of the strawberries. She would drain the juice off the fruit, add water to the juice, boil it, and used it to dissolve the Jello!
