The recipe I am about to share with you is one that has been made by the women in my family for at least the last 100 years. I remember my grandmother making this cake. I suspect that she was making this cake from the time she and my grandfather moved to WV from Scott County, VA back in 1910. My cousin brought this recipe back to my attention by posting a picture of a recipe card her mother - my Aunt Oma - on FB. It has brought back so many memories for most of us in the family as well as those who live in the area. Many remember their grandmother/mother/aunt making a cake similar to this. Many of of my family and friends have asked for the recipe, so I thought I would share it using the blog! I have included pictures of some of the steps used in making the cake. This is most definitely an "OLD FASHIONED" Stack Cake!
The recipe calls for Apple sauce, but Mom wanted me to use some of her dried apples. I cooked them; mashed them, and then sweetened them!!!!

Once the ingredients have been mixed together, the dough will be stiff - like cookie or pie dough!
I make a ball so that I can roll the dough out like pie crust.
I then used one of Mom's OLD scalloped pie pans as a cutter . . .
. . . which gave me the scalloped edge for the cake layers.
The cake layers are thin, and on the cake I used six layers with the dried apples I cooked in between each layer. The apples were juicy and the cake will soak up the liquid!
I made two cakes, a mini-cake, and a couple of "molasses cookies with the dough I made. You are suppose to let the cake to set for a day before slicing it! Good luck on doing that! :)
Following is the recipe for the Stack Cake. Variations on spices, type of apples used is up to your taste!! One friend said she was thinking about adding raisins to the apple mixture!!! The sky is the limit to how you might add to or take away from this recipe!
Old Fashioned Stack Cake
1/2 cup shortening
1 cup sugar
1/3 cup molasses
1/2 cup buttermilk
1 egg - beatened
2 tsp baking powder
3 1/2 cups flour
1/2 tsp soda
1/2 tsp salt
1 tsp ginger
Cream shortening with molasses; Add egg; Mix all dry ingredients and add with milk.
Beat to a stiff dough; cut out with a scalloped pie pan; place rounds of dough in pan to bake. Bake 12-15 minutes. (oven 350-375 degrees)
Put together with apple sauce; Let stand overnight before serving.
